Chocolate Chip Pumpkin Bread

A simple and delicious fall favorite. Not too sweet, the perfect amount of spice.

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 cup pumpkin puree
  • 1 tsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup vegetable oil
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 1 3/4 cups semi-sweet chocolate chips

Instructions
 

  • Preheat your oven to 350 degrees.
  • Grease a bread loaf pan. I used an 8" x 4".
  • In a bowl, whisk together the flour, sugar, pumpkin pie spice, baking soda, and salt.
  • Add the pumpkin puree, vegetable oil, eggs, and vanilla extract to the bowl. Mix to combine.
  • Add 1 Tbsp of flour to 1 1/2 cups of chocolate chips to lightly coat them. Fold the flour-coated chips into the mixture.
  • Pour the mixture into the bread pan. Sprinkly remaining chocolate chips on top.
  • Bake for 50-60 min. Depending on your over, I'd set a timer for 45 min and keep checking it until a knife comes out clean.
  • Remove from oven and let the loaf cool in the pan. Slice and enjoy!
